- Freshness. From the collection to the laying of vegetables, a minimum of time should pass. Samples that have lain for a day or longer are only suitable for preservation.
- Elasticity. For preservation, elastic specimens with thick skin are selected. Loose watery fruits with a thin skin are rejected.
